Christian’s XXXL Short Rib Sando

Ingredients:
1 slab short ribs, defrosted
Mayonnaise
Thick cut sandwich bread, toasted

Brine:
50g sugar
50g salt
1L water

Rub:
1 tablespoon Fine salt
1 tablespoon Paprika powder
1 tablespoon Garlic salt
2 tablespoons Brown Sugar

Brine the short rib with a solution of sugar, salt and water overnight
Pat dry and then massage in the rub
Roast 130C for 6 hours (or 150C for 4 hours)
Allow to rest for 30 minutes before slicing.
Assemble sandwich with your favourite mayonnaise.
